You may click on any one plugin to uninstall it. Right-click on one and there may or may not be "Configure Extension Settings" as an option wherein you would tweak how the plugin behaves. The list is also the fifth of the six menu items within icons down the left edge of VSCode: Explorer, Search, Source Control, Debug and Run, Extensions, Test ...some plugins of note:
